- 2 eggs
- 1 cup sugar
- 1 cup flour
- 6 tablespoons cocoa
- 2 teaspoons baking powder
- 1 teaspoon vanilla
- 2/3 cup milk
- 2/3 cup butter (1/3 cup oil)
- 4 ounces semi-sweet chocolate chips (optional)
DIRECTIONS
1. Pre-heat oven to 350 degrees.
2. Grease 6 extra large muffin tins or 12-15 medium cups.
3. Beat the eggs with sugar, mix with flour, cocoa powder, baking powder, vanilla and milk.
4. Fold in the butter.
5. Add chocolate chips. (These might end up on the bottom.)
6. Bake at 350 degrees until a wooden pick inserted in the center comes out clean. About 30 minutes for XL muffins or 20 minutes for medium sized muffins.
Serve hot or at room temperature.
