INGREDIENTS
1 1/2 cups sifted all-purpose flour
1/2 cup sugar
1 teaspoon baking soda
1 teaspoon cream of tartar
pinch of salt
1 cup yogurt (8 ounces)
1/4 cup vegetable oil
2 eggs, beaten
1 cup raisins
DIRECTIONS
1. Preheat the oven to 400 degrees F. Lightly grease 8-10 muffin cups.
2. In a medium-sized bowl, combine the flour, sugar, baking soda, cream of tartar, and salt.
3. In a large bowl, combine the yogurt, oil, and eggs. Stir in the raisins. Fold in the flour mixture until a tester inserted near the center comes out clean.
4. Bake for 20-25 minutes, or until a tester inserted near the center comes out clean.
Yield: 8-10 large muffins.
