Baked Oatmeal

After Hubs and I were married, I asked him what he ate for breakfast. He casually replied, “Oatmeal.” I didn’t understand his commitment to oatmeal until we made our first married trip to Costco and Hubs picked up two gigantic tubs of oatmeal.

Even though I never ate breakfast, it didn’t take long before Hubs converted me into an oatmeal-for-breakfast enthusiast.

Hubs loves anything that has oats in it: oatmeal spice cake, oatmeal raisin cookies, oatmeal blueberry muffins, groatmeal, granola bars, granola, etc. He’ll even toss a cup of oats into a smoothie.

When Rachel shared a recipe for Baked Oatmeal, I knew I should give it a try.

What I wasn’t prepared for was how wonderful this recipe is!

It is now everyone’s favorite breakfast.

If I tell Schäfer that we’re going to have a special breakfast and he can choose anything, he’ll say, “Baked Oatmeal!”

Without further ado:



2 eggs
3/4 cup sugar
1 cup milk
1/3 cup melted butter
2 tsp baking powder
1/2 tsp salt
1 tsp vanilla
3 cups quick-cooking oatmeal
1 cup fresh fruit


In a large bowl mix eggs, sugar, milk, butter, baking powder, salt and vanilla.

Stir in 3 cups quick-cooking oatmeal and spread in a greased 9×13 pan.

Top with 1 cup of your choice of chopped fruit and bake at 350 for 25-30 minutes.

Our favorite topping is cinnamon apple slices.  Mix 1 tablespoon sugar to 1 teaspoon cinnamon in a container with a lid. Add the apple slices and shake. Place slices on top of oatmeal and bake.

We’ve also enjoyed cinnamon coated bananas.

    Yummy baked oatmeal! So glad your family loves it too. We’re having it for breakfast this morning…with bananas sliced in and some strawberries on top! I’ve also tried it with bananas sliced in and topped with a handful of chocolate chips and bit of coconut. YUM!

  • Hey, just letting you know I made the baked oatmeal this morning for our New Year’s Day breakfast!! Oh so yummy!! I changed it up a little and used brown sugar (can you guys get the raw or turbinado sugar there?). Then I added a sort of streusel topping of 1/2 C brown sugar, 1/2 C flour, 4 T melted butter and 1/4 C chopped onions. I put the apples IN the mixture and it was glorious!! Thanks for the recipe and Happy New Year sweet friends!! Missing you lots and looking forward to your next stateside time!!
