Tex Mex Recipe Round-up

Dinner devoured
Tonight, Mr. O came for supper so we had ourselves a little Tex Mex Fiesta in his honor. It was such a yummy meal and there were plenty of leftovers.

Learning to cook Tex Mex has been a culinary adventure from baking wonton wrappers to making my own taco spice.

Here are all of my Tex Mex recipes in one place.

Fiesta Core:

tortillas
red rice
refried beans
mexi ranch 2 ways
pico de gallo
restaurant style salsa
any type of meat marinaded or dry rubbed with taco seasoning

Fiesta Supplemental:

If we have carried home some whipping cream then I’ll definitely make sour cream. If I have sour cream, then I’ll probably make a 7 layer dip or add a dollop into some cilantro cream sauce.

We use to make wonton or dumpling chips. Trust me, the wonton chips are much more chip like (thin and crispy) than the dumpling chip (thick and crunchy). By themselves, the wonton chips are tasteless, but with some salt and lime juice they can be quite tasty.

Hubs loves chili rellenos casserole, but neither the kids nor I can take the heat. So Hubs is left to finish off an entire 9×13 casserole by himself. (Hubs: It’s a good recipe for when we have spicy-food loving Chinese guests.)

I’ve been working on an enchilada casserole. I made it once and it was a complete failure because my beans were as hard as bricks. Now that I’ve had consistent success with beans in the pressure cooker, I think I should try this making an enchilada casserole again. Hard beans or not, this enchilada sauce is tasty.
