Strawberry Lemonade Bread

Hello strawberry lemonade bread.
You are the very definition of “Yum”.

A little lemon syrup was completely unnecessary, but delicious all the same.

2 Cups fresh strawberries, roughly chopped
1 1/2 Cups all-purpose flour
zest of one lemon
3/4 Cup granulated sugar
1/4 Cup brown sugar
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
1/4 Cup vegetable oil
1/4 Cup fresh squeezed lemon juice
2 eggs, lightly beaten
1 tsp vanilla extract


1. Preheat oven to 375F. Grease and flour a 9X5 inch bread pan

2. Place chopped strawberries in a large strainer or colander and sprinkle with a couple of Tbsp of sugar.  Let sit for about 15 minutes.

3. In a large mixing bowl, combine flour, lemon zest, both sugars, cinnamon, baking soda and salt.

4. In a separate bowl whisk together eggs, vanilla, oil and lemon juice.

5. Stir in the strawberries.

6. Pour wet ingredients into the dry ingredients and stir until combined.  Do not over-mix.

7. Pour batter into prepared loaf pan.  Bake for 45 minutes, or until a toothpick inserted into the middle of the loaf comes out clean.

8. Remove from oven and let cool before removing from pan.
