Strawberry Pie

Believe it or not, but December beings strawberry season in southwest China. Apparently, they will stay around through March.

Who are we to be so blessed?

All the kids love to have a big bowl of strawberries for snack time.

Early in the morning, Hubs would venture to the market and buy strawberries by the pound. When he returned home from work at 5:30pm he would ask, “Where are the strawberries?” To which I would reply, “The baby ate them.”

(I was referring to the baby still in utero because he/she apparently also loves strawberries.)

As much as I love strawberry smoothies, strawberry muffins and strawberry yogurt cake, my favorite thing to cook is: strawberry pie.

This recipe for Strawberry Pie is about as simple as it can get. It doesn’t call for a box of strawberry Jell-O (huh?) or some other ingredient that is impossible to find on the east side.

Me, Selah, and baby #4 at 30 weeks are all ready for a slice of strawberry pie.

1 (9 inch) pie crust, baked
1 quart fresh strawberries
1 cup white sugar
3 tablespoons cornstarch
3/4 cup water
1/2 cup heavy whipping cream

1. Arrange half of strawberries in baked pastry shell. Mash remaining berries and combine with sugar in a medium saucepan. Place saucepan over medium heat and bring to a boil, stirring frequently.

2. In a small bowl, whisk together cornstarch and water. Gradually stir cornstarch mixture into boiling strawberry mixture. Reduce heat and simmer mixture until thickened, about 10 minutes, stirring constantly.

3. Pour mixture over berries in pastry shell. Chill for several hours before serving.

4. In a small bowl, whip cream until soft peaks form. Serve each slice of pie with a dollop of whipped cream.
