Lasagna Sauce:

  • 2 pound ground beef (2 jin)
  • 1 (28 ounce) can stewed tomatoes and 1 (28 ounce) can crushed tomatoes (3.5 jin fresh tomatoes)
  • 2 yellow onions chopped (or whatever onion is available)
  • 2 green bell peppers chopped
  • 5 cloves garlic chopped
  • 2 tablespoons white sugar
  • 1 tablespoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon garlic salt
  • pepper to taste

Note: For a lighter lasagna – both on the budget and the cholesterol – is to substitute any fresh veggies instead of ground beef. ANY: eggplant, zucchini, etc.


  • 8 ounces lasagna noodles (check a noodle maker near the open market – have the noodles cut wide OR overlay dumpling wrappers )
  • 1 (16 ounce) package large curd cottage cheese (1.5 jin odor-free tofu block mashed with hand to create cottage cheese look OR make ricotta cheese from scratch)
  • 1 pound mozzarella cheese, shredded


Lasagna Sauce:

Blend the stewed tomatoes and crushed tomatoes (fresh tomatoes) in a blender. In a stock pot or large kettle, brown the ground beef with the onions, peppers, garlic. Pour in tomatoes, and reduce heat. Add sugar, basil and oregano, salt and garlic salt and simmer about 40 minutes. Season with pepper.


  1. Bring a large pot of lightly salted water to a boil. Cook noodles in boiling water for 8 to 10 minutes, or until al dente; drain. (your fresh noodles or dumpling wrappers don’t have to be pre-cooked)
  2. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch glass baking pan.
  3. Line bottom of pan with three lasagna noodles. Spread 1/3 of sauce mixture over noodles. Layer 1/3 of the cottage cheese (tofu or ricotta cheese) over the sauce. Sprinkle 1/3 of the mozzarella over the cottage cheese. Repeat this layering process until all ingredients are used up.
  4. Bake in the preheated oven for one hour. Let stand for 10 minutes before serving.

These fresh noodles are delicious. Ask the noodle maker to cut them wide.

OR use dumpling wrappers and layer them yourself.

You can buy odor-free tofu at the tofu-sellers. (Yes, they have odor-free.) This makes a great and nutritious substitute for the cottage cheese. Fear not! The tofu also gives the same consistency. OR you can make ricotta cheese from scratch. It’s easy!
