Oatmeal Spice Cake

I recommend doubling this recipe for a 9×13 pan if you like a hefty piece of cake. We generally eat this sans icing.

Combine and let stand 10 minutes:
1 3/4 cups boiling water
1 cup oatmeal

Add and mix well (until butter melts):
1/2 – 1 cup sugar
1/2 -1 cup lightly packed brown sugar
1/2 cup butter

Add and mix well:
2 large eggs

Add and mix well:
1 1/2 cups flour
1 teaspoon soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice

Pour batter into greased and floured 9×13 pan. Bake at 350 F for 40 minutes.

This cake is super moist and delicious!

    Another yummy variation of this oatmeal cake is this Oatmeal Chocolate Chip Cake. Increase the amount of flour by 1/4 cup. Omit spices and add 1 Tablespoon cocoa to the flour mixture. After combining the flour and oatmeal mixtures, add about 6 oz. chocolate chips (or cut up chocolate bar). Put batter in pan and sprinkle 3/4 cup chopped nuts and another 6 oz. of chocolate chips on top. Tastes even better after it has chilled in the refrigerator for a few hours.
